SHAKSHUKA RECIPE
INGREDIENTS
- 1 can tomatoes whole or 3 fresh tomatoes (peeled and seeded)
- 1/2 green onion (chopped)
- 1/2 tsp Harissa (or more to taste)
- 1tsp Kefta rub
- 1/2cup parsley and cilantro (chopped)
- 2 tbsp extra virgin olive oil
- 1/2 cup water
- 6-8 Prawns or Meatballs (optional)
METHOD
1. Heat the olive oil in a pan or cast iron pan on medium heat.
2. Add the chopped onion and cook until translucent. Add the tomatoes and cook for 5minutes or until the tomatoes have started to thicken. Add the spices, half of the herbs then the water. Cook for 10 minutes until the sauce is reduced.
3. Add your eggs one at a time. Add prawns then reduce heat to medium-low and cook until the eggs reach desired finish and prawns are cooked through, about 10 minutes for medium-soft eggs.
4. Sprinkle with parsley and cilantro and drizzle more olive oil and harissa to your taste.
